The saying goes, "when Mama ain't happy, nobody's happy"! I usually feel happy, blessed and generally content unless there is an issue with my children and/or grandchildren. Some of my babies are not feeling 100% today.
On a day like that, a bowl of homemade chicken soup is very soothing. It is not too heavy, and it feels good on a sore throat. Unlike many canned soups, you control the amount of salt, and what ingredients are used. Leftover chicken is great for this recipe. If you use chicken with bones, remember to check carefully and remove them before serving. You can also substitute egg free or gluten free noodles for regular ones in this recipe.
Homemade Crock Pot Chicken Soup
Ingredients
3 C. Chicken (boneless or boned)
2 T. Olive Oil
32 oz. Chicken Stock or Chicken Broth
4 C. Water
1/4 tsp. Minced Parsley
1/4 tsp. Pepper
1/4 tsp. Salt
1/2 C. Finely Chopped Onion
1 Stalk Chopped Celery
1 C. Finely Sliced Carrot
1 C. Frozen or Fresh Sweet Baby Peas
1 1/2 C. Wide Egg Noodles (same amt. if using gluten free or egg free noodles)
Preparation
1. Over medium heat, brown chicken in olive oil.
2. Place browned chicken in crock pot on low heat.
3. Add chicken stock/broth,water and spices.
4. Add the onion,celery, carrot, and peas and noodles.
5. Allow to cook for 6 to 8 hours.
6. Remove bones from soup if using bone in chicken.
7. Serve and enjoy!
