I have had several requests for a recipe for a healthy, "snacky" type food. I immediately thought of my granola recipe. It is simple, tasty and like so many of my recipes, you can change it up for a little variety! I love granola on yogurt, with my almond milk as cereal, and just to snack on all by itself!
Ingredients
5 C. certified gluten free oats
1/2 C. butter, melted
1/2 C. plus 2T. light brown sugar
1/2 C. honey or agave sweetener
1 C. raisins or any chopped dried fruit
2 C. flaked coconut
4 C. crushed corn chex type cereal
1/2 tsp. salt
1 C. any kind of nut
Ingredients

Preparation
Preheat oven to 300 degrees F.
1. Line a 15 X 11 baking sheet with parchment paper.
2. Mix together all ingredients in a large bowl, until completely and evenly coated with butter and honey (or agave sweetener).
3. Spread the mixture evenly onto the baking sheet.
4. Bake for approximately 35-40 mins. stirring occasionally.
5. Turn off oven and allow granola to completely cool inside the oven.
6. Remove from oven once cooled and store in a sealed container.
